01 / ABOUT THE PLACE
About this place
Steps from Kami-Igusa Station on the Seibu Shinjuku Line, Tonkotsu Ramen Teppen offers custom-built ramen built on a foundation of diverse pork-bone broths. Its signature tonkotsu ramen allows diners to choose between rich (kotteri) or light (assari) broth, select thin, medium-thick, or thick noodles, and fine-tune the saltiness at the time of ordering. With other styles such as tonkotsu shio, tonkotsu niboshi, and Tokyo shoyu on hand as well, it is easy to find a bowl matched to personal tastes and the day's cravings.
Abura Soba, Tsukemen, and Generous Portions
Brothless noodles and dipping noodles are just as well covered. The abura soba can be ordered anywhere from a regular 160 g portion to an extra-large 320 g serving at no extra charge, with extra broth available on request mid-meal to transform the flavour profile. The tonkotsu tsukemen uses the same flat-rate portion system, ranging from regular to large, extra-large, and a massive 480 g mega serving. Its sweet-savoury herbal tonkotsu dipping soup can be rounded out at the end with a refreshing splash of niboshi broth.
Side dishes include chashu rice, mentaiko rice, crushed seasoned egg rice, negi rice, and boiled gyoza finished with sesame sauce. Orders are placed via individual tablet screens at partitioned counter seats, creating a relaxed setting to eat at your own pace. Operating straight through until 0:00 late at night, the shop is a dependable stop for a late dinner or an easy post-work meal.
